In Germany there are special variations of doughnuts - without a hole. They are filled with jam or all kinds of cremes and called "Krapfen" or "Berliner". Eveybody likes them to eat on carnival or New Year's Eve - but of course you can buy them all year in cake shops. It is not difficult to make them on your own. The only diffculty is the controlling of the oil temperature. But the reward for your effort is a wonderful, tasty, fluffy doughnut variation. Printable version: http://on.fb.me/14a72E3 Gram to Cup Conversion* ----------------------------------------- - 2 1/2 cup cake flour (only, not bread flour) - about 1/2 cup milk - 1/4 cup sugar - 3 egg yolk - 1 egg - 1/5 cup butter, melted - 1 pinch of salt - lemon peel - 1 tsp vanilla flavored sugar - 21 g fresh yeast (about 1 tbsp*) or 8 g Dry Yeast (about 1 tsp*) - your favorite jam - big pot with about 8.5 cups (sunflower) oil (*=not sure if conversion is right) HTH!
