Sesame Hollow Donuts Recipe - Bánh Tiêu - 咸煎饼 - Morgane Recipes
When I was young, I remember that it was difficult to make a choice
when my mother asked me 'which donut do you want?’
Today I'm going to show you how to make Ham Chim Peng
: hollow donuts also called in Vietnamese Banh Tiêu.
They are hollow inside, slightly sweet and scented with sesame seeds.
In a bowl, I dilute 40g of sugar in 125ml of warm water
I add 4g of yeast, I don’t mix,I let it sit for 15 minutes
In a mixing bowl, I sift 250g of wheat flourwith 4g of baking powder
I add a pinch of salt
I mix
The yeast has rested for 15 minutes,I pour it into the bowl
I mix with a spatula
I add 1 teaspoon of vegetable oil
I knead for 5 minutes
The dough becomes soft
I form a ball
I put some flour in a bowl
I put the dough,I cover the bowl with cling film
I let the dough rest for 2 hours at room temperature
After 2 hours, the dough has risen
I gently knead it for 10 seconds to removethe air
I sprinkle my work board
I roll the dough into a log
I cut it into 8 equal parts
I form a ball with each part
I put them in a tray
I film and I let rest for 15 minutes at room temperature
After 15 minutes, I take a piece of dough
I flatten it a little
I put it in the sesame seeds
I slightly press so that the seeds stick to it
I spread it gently with a roll to obtain a disc of about 10cm
The thickness should be regular and about 7mm
I put my discs on a tray under a film
I fry my dough one by one in the oil at 160°C
I put a dough in the oil and I wait for it to rise to the surface
I flip it every 2 seconds for about 2 minutes
The donut will cook and inflate evenly andslowly
If the oil is too hot, the donuts will inflatetoo quickly
and they will be burned before being cooked.
I remove the donut when it is golden
I put it on paper towels
From time to time I remove the sesame seeds
The donuts are ready
Enjoy them with a cup of tea
